Unlike some other houses, my ancestors earned the Bolton words "Our blades are sharp". They passed down not a Valyrian greatsword but a knife, honed and thin enough to fit between the topmost layer of skin and the tissue below... and peel.Histories & Lore (animated series)What about to add for house Bolton their artifact?

I am not sure whether it is supposed to be taken literally as them keeping the same knife for thousands of years - I don't think normal weapon would survive that long.

In my language it seams that ancestors of Roose gave to their descendants valyrian not greatsword but knife. In english structure it is same?

I can see how it could be read that way but I don't think that is the case here. If Roose was in possession of a special Valyrian steel knife with a storied history it would certainly have been mentioned by now, whereas no account of any living Bolton or any story of Bolton history ever mentions such an artifact.
Also worth mentioning that those animated history and lore shorts you're quoting are show canon not book canon, and even in the show such a knife was never once hinted at.

Not weighing in one way or another: but properly maintained and high quality steel knives could in theory last hundreds of years reliably. However, this requires them to be properly maintained by each owner, so one bad heir and the knife would of been screwed. That said, there are some famous examples RL of perfect condition thousaand year old swords being found by archeologists, but for obvious reaaasons only one or two exist due to the fact being burried in a non-weather sealed environment normally is bad: en.wikipedia.org/wiki/Sword_of_Goujian
