Go in hinding and running away from a besieged Castle isn't exactly an easy thing.
It is way to easy to just send you entire familt in hinding, make sieges pointless as the besieger for other things that warscore.
I think it would be a good idead if the "send court in hinding" decision should have chances of fail, getting you or members of your familly captured by the ennemey or evend killed. It would make it a coslty decision and not just an automatic thing to do.

The way the events are localised gives me the impression that you are sneaking out before the siege is set up when the enemy army is still approaching.

I always thought that they were hiding in some secret room or something (in hiding), although they escape before the siege, seems to make more sense.

To add onto what Toccs said, surrounding an entire castle in enough time to actually stop anyone from using a postern gate or secret exit would be difficult. Sieges aren't just showing up, you have to prepare. And most Lord's would have a dozen scouts, so, they'd know you were coming and be gone.
