For Vanilla (CK2+ has it integrated) there are some mods (Ruler Designer Unlocked) to adjust the age of the self-made leaders.

In my opinion the Ruler Designer Unlocked is incompatible. Do you know any mods that are AGOT compatible and let me adjust the age?

I'm able to use the Age Customizer mod for CK2 vanilla in AGOT. It causes a few issues in-game, but once I've created my ruler, I leave the game and go back in with the mod deactivated, and the issues cease. Yes, the game still works without the mod deactivated.
