Something to note, though whether worth the devs time or not is debatable, you could reflect the diversity of provinces with county tags denoting religious minorities. and have seperate events for courtiers appearing or chances to convert faith. Depending on depth can have these minority tags have "strength" levels representing amount of the community with an even to examine your personally held counties diversity. You could go a step further by having trade posts, trade routes, and neighboring counties passively influence these and if they gain enough strength even become dominant county religion. Instead of prostelytixing directly change the county have it affect strength of minorities through expansion/persecution until it reaches a strength to flip the county. While that sounds great, I imagine it would be pretty hard to simulate a religious minority system outside of an engine more like Vicky 2.

I wonder, due to the importance of sex and acceptance of free love in the Summer Islands, should the Summer Gods allow multiple concubines and consorts for male and female rulers? (Also linked to my inclination for the Summer Islands to start fully cognatic)

As I said, not sure if it's worth the time-but it's completely doable with events and province tags. To do it game wide would howwever cost a chunk of CPU as it'd have a large amount of extra maintenance and update events switching and altering tags regularly. This is one reason why the warhammer mod after being optimized for reapers due led people with powerful computers to rejoice-they could actually run the mod at 3 speed with state of the art hardware. It made extensive use of tags and modifiers for all kinds of things, even having quite advanced genetic lineages using character tags so even having a single genius ancestor increased your chance over like the next 5 gens to get genius, quick, or even the negatives to an extent(Genius and idiocy are a thin line of competency). While this wouldn't be quite as extensive as having dozens of tags maintained and checked for every character IG, among other event and script heavy things, it would likely place a notable load on the mod.

Perhaps a more doable fix would be to have regional events? Similar to you getting rain dance events in Sub-Saharan Africa no matter your culture or religion, Free Cities/Asshai'i characters could regularly have events that spawn Many-Faced God, R'hllor, Trios, Pantera, Bakkalon, Saagael, Weeping Lady of Lys, Bearded Priests, Moonsingers, or Black Goat of Qohor cultures. As well as other events that allow characters to easily convert, etc.

While I agree that lore-wise Asshai is R'hllorist and that shadowbinders are not of a separate religion, I'm not too keen on the idea of conflating them for balance purposes. The R'hllor religion in the mod is already too overpowered in my opinion. Adding shadowbinder abilities to it* would make it even more so, so I'm happy to keep things as they are for balance purposes. *Technically R'hllorists can get access to shadowbinding. Female red priests have a 5% chance of knowing shadowbinder magic. Melisandre always knows it.
