So currently the giants don't have a huge effect in game - you can hire them if you're a wildling and that's about it. It might be an idea to give them one or two counties beyond the wall and make them playable.
You could then do things like trying to reverse the decline of the giants, conquering new lands etc. You could also have giant themed events such as obtaining a mammoth steed etc.
They wouldn't be able to marry non giants (although maybe a super rare chance for events where a non giant and a giant can breed creating a human character with tall).
Maybe they should also have a different building chain to reflect their more primitive society.
All in all I think that playable giants would be a fun addition and spice up beyond the wall as a region by adding a powerful but primitive faction that has limited diplomacy options but can be very valuable if you subjugate/ally with them.

Additionally (and I appreciate that this is probably far less likely to happen) but I think it t could be a really neat idea to make the Children of the Forest and maybe the Ifquevron an off map power like China in Jade Dragon. Set their diplomatic range quite low so that its only really beyond the Wall rulers and maybe the North who can interact with them. Set it up so you accrue favor by having piety in old gods and particular traits ie a zealous follower of the Old Gods with skinchanging, mystic, green sight etc.
Then you can spend that piety on blessing your house to increase likelihood of skinchanging in your children or to gain rarer skinchanging animals, or to gain cotf at your court (as can already happen) like how in JD you can get a Chinese strategist. Lastly just as relatives can go off to China and never come back characters (particularly ones with greensight) could go off to the cotf and never return.

I like this idea, thinking about it (I tend not to play close enough to interact with China) is there some way that characters who go to china can join the imperial court? I'm thinking about Bloodraven and Bran etc, and can you modify succession so that bloodraven can inherit the CotF title. I'd suggest having the CotF ruled by the Greenseers as it makes the most sense, maybe give Bloodraven the immortality trait so he stays alive, also maybe make the greenseer head of the various old gods faiths

I would love to see playable giants but I'd be happy if it was locked behind the Ruler Designer (you had to choose to replace some random Wildling character first).

Kyleg Wooden Ear rules both Frost Caves and Forktop in the later bookmarks - he doesn't need two counties, and most of the older wildings are made up entirely so frost caves could be given to the giants as a county without affecting the lore, plus it borders Thenn valley which makes sense as the Thenns were said to have more dealings with giants than the other wilding tribes

On the off map mechanics. They do not actually have a court so you cannot have characters who run off join the court per se. But I think there may be some mild ways to manipulate succession with flags but not 100%. However, in the case of CotF I really feel that the actual ruler does not matter so much with how this was proposed, since not sure there is an absolute emporer who's favor your currying as opposed to the CotF as a whole. But that could just be me.
