Jorah Mormont was knighted during the Greyjoy Rebellion after a certain assault on Pyke.
As it stands, the mod has him being a Knight already in the Robert's Rebellion start date, in addition to Faith of the Seven.
I am not sure whether he follows the Faith of the Seven or the Old Gods in canon, but would it not make more sense for him to be Old Gods, due to not having been knighted up to around age 30 by Robert? If he was born FoT7, then it would be more than likely he would have already gone through with and attained knighthood.

Edited for Quotes-
from ACOK: "...Lord Balon Greyjoy rose in rebellion against the Usurper, and Ned Stark called his banners to help his friend Robert. The final battle was on Pyke. When Robert's stonethrowers opened a breach in King Balon's wall, a priest from Myr was the first man through, but I was not far behind. For that, I won my knighthood."
from AWOIAF: "...Jorah fought in the Greyjoy Rebellion, during which he distinguished himself by showing exemplary courage on the battlefield, being one of the first men through the breach during the siege of Pyke. He received a knighthood from King Robert Baratheon in recognition of his bravery. Illyrio Mopatis claims Jorah was anointed by the High Septon when he became a knight, but it is unknown if Jorah follows a religion."

They definitely can, Ser Bartimus from the Wolfs Den (who definitely follows the old Gods), the Blackwood knight in one of the Dunk and Egg books, Ser Rodrik Cassel, etc. The books say that Old God followers tend to not become knights because it usually involves praying to the seven and it lacks the same cultural prestige it has in the south, but knighthoods on battlefield seem to be a lot more informal (without the anointing and vigil in a sept) and so the current mod setup of Northmen not being able to get knighthoods very easily but able to get them by squiring or tournament events is a good way to implement it. Also let's face it if Robert comes up to you after a battle and says "Lord Jorah excellent job in that battle, I'm going to knight you personally as a show of my gratitude for your leal service" you aren't going to say "Sorry I follow the Old Gods so I refuse your honour"

The knight trait is not faith restricted, it's just that the majority of easy events to become a knight require FotS. But as was mentioned, if your at a tourney you can be knighted and a few other cases, and I believe this event doesn't block out for religious reasons. So nothing preventing the old gods from potentially becoming knights, even if the events to do so are scarce.
