I think that the knight trait should definitely pass on religion change and that Rhllor faith characters should be able to knight other characters but I also think it should be restricted to culture(only Westeros cultures have knights).Maybe changing the description of the trait for the Rhllor character instead of blessed by the seven and septon,it should say blessed by the Lord of Light or something like that.If they were knights before changing faith they should keep their trait.(Its not like any of Stannis Baratheons followers stopped being knights).But if those knights choose to knight someone else it should be new trait with red priest instead of septon.
This is only speculation considering that Rhllor is an emerging faith in Westeros and we do not know how Stannis would combine Andal Westeros traditions with this new faith but i speculate that he would surely have to compromise and keep the knights tradition if only changing its symbolism so as to please everyone.I also think this would happen if lets say Robb Stark takes the Iron Throne.He either would change his religion to Faith of the Seven(which is already a mechanic in the game) or he would adopt certain cultural traits of both religions like lets say knights(which is not represented in the game).Maybe this could be represented by altering the already in game mechanic of secret faith and public faith.So as to allow for Robb to remain his religion but still ad the ability for him to act as an Andal king.I think this should be the case for every ruler who rules a vast population that is a different culture than his own.Like Daenerys adopting Qarth tradition of dress or adopting Meeren traditions.Same as Aegon the Conqueror adopting Faith of the Seven and being crowned by the Septon but still keeping incest marriages or like real life Alexander the Great who adopted Persian traditions so that he could rule not only over greeks but also over persians(which of course displeased the greeks).This could also be represented with events which makes it even harder for rulers who have different cultures and religions than their subjects.This is a much broader topic which I dont will ever be implemented but I would love to see it in the mod because it would add an increase in difficulty in relation to culture,religion management and it would also increase immersion.
Overall I think that culture,religion,the High Sparrow(and all powerful heads of religion having more influence on the game through events),knights(hedgeknights,knights with different religions),Kingsgurads(different Kingsguards like Rainbowguard...)could all be a lot more in depth.Same as banking.It was always in the game as a decision to borrow money but it was never actually fleshed out until now.
