In Fire & Blood during the succession crisis in the Vale after the death of Jeyne the Maid, one of the claimants is the head of the Gulltown Arryns, Isembard Arryn the "Golden Falcon", seeing as cadet houses tend to differentiate their arms and we have never been given the arms of the Gulltown Arryns I'd take the "Golden Falcon" to mean that their sigil is a golden version of the Arryn sigil rather the normal Arryn sigil they currently use
