Besides the regular plotting and management stuff to handle during peace times, there's not too much going on in Westeros during peace times. Might be a cool idea to give an option when you're selecting a feast, or holding a tournament, to have the event held in the honor of a war held within the past X amount of years, or to celebrate the achievements of a family member in X amount of years, or to honor anyone that's a vassal for excellent service like a lord that single-handedly won the war path or some such, perhaps awarding a modifier that gives a boost to opinion for that character among the kingdom. A few flavor events that are stylized around the kind of feast or tournament held, i.e. higher chance for lustful events if in honor of a now famous lord for his feats or other high tier lords trying to pocket their loyalty for future events, ect. Or a once a year option for a grand feast that can invite any lord within the same empire for a high sum of gold and have some flavor events depending on the characters scores to present different routes of opportunities. High intrigue characters of low rank maybe persuading high lords or LPs to consider their offers of hurting one of their political enemies in exchange for w/e they're perusing. High martial/combat score characters stopping a would-be assassin/mugger assaulting a lord or lady, high diplomacy making new friends or helping resolve rivalries/disputes or flaring up brand new ones if they have the right kind of traits.

Maybe once a year when going hunting you can issue a hunting competition, a prestige event factoring martial and intrigue for other lords to compete or create accidents/kidnappings if a plot is being schemed at the same time the hunt is called for, ect.

A dragon rider LP or higher holding a tournament consisting of war games and duels to find a suitable dragon rider from the most elite of the lords of the realm, maybe. Using a mix of the war game tactics minigame with a round robin dueling akin to the melees of the north. Either for a riderless dragon or for an egg the owner has currently.

If more ideas come to mind I'll probably post them here later.

Event/plot that can be triggered or assigned to the Master of Ships council position to undermine the effectiveness of pirates/corsairs, based on the stats of the individual holding the title. High diplomacy/stewardship redirecting them to raid other targets, perhaps enemies of the throne or lords across the sea. High martial score leading to raid a pirate fort and reduce it a level and steal back the stolen gold. High intrigue kidnaps the pirate lord and leaves him at the mercy of the king.

Playing on the earlier idea for the feasts, lords that have artifacts/VS swords/ECT can pick through the interactive menu on a character to hold a feast awarding them the said object. Make it a bit flashier than a small opinion bonus and a short message expressing thanks to priceless artifacts and the like. Build prestige and/or piety based on the item being given to them, increased opinion modifier for throwing a feast to celebrate the event, family members of the receiving end gain bonus opinion, ect.

During the Host Feast event, courtiers and vassals like to come up to you and present grievances and slights committed upon them by others in the realm. It seems that outside of major festive events such as a tournament or feast these never get brought to light to their top liege. An event to hold court every 2-3 times a year for such events might help reduce the amount of these that occur during a feast, an optional event of course. Once you start reaching higher and higher tiers of titles and rule for longer periods of times, your feast events can be swarmed by these. I once had ten of these flag in one feast just 25 years in as a bottom tier lord with 2 castle holding vassals and one city holding vassal. At high lord and LP level it gets a bit crazier, with several of theses happening at every feast and tournament.\

Could probably spice up the event a little bit, too. Add in more slights and grievances, add in a chance for low-income vassals to petition their lord for assistance in improving their holdings via building upgrades or increased taxes diverted from your treasury to their own. That would need a gold check though to make sure you're not getting those events when you yourself are low on gold and/or income.
