It's not exactly cannon or not cannon but I can't see why it shouldn't be a valid ambition choice if an Old Gods follower wished to have the ambition to become a knight. Merely as an option...
To back that up/offer some support... I've seen some people talk about Southron houses that while they are officially FOTS that they have significant ties to the Old Gods, such as the Reforts and the Royce's. Could there be a trait or some other kind of identifier called Old and New that allows characters to revere the old but worship the new? It would allow FOTS to participate/host melees, build/keep a weirwood tree(or whatever level up to forest) in the temple holding as well, and permit any other flavor events added in the future for Old Gods religion as well. Only reason I mention this is because I'm like 99% certain I remember quotes from the book where people talk about honoring the old gods and the new/praying to the old gods and the new. It would also justify more marriages between northern and southron houses. If a southron house still holds the old gods in reverence and even has a small weirwood grove or just a single tree it could serve as a cultural opinion boost.
