I started playing a few days ago so I am still new to this game/mod. I am using the latest version of the mod (1.6.1) and the option to Face the Dragon never seems show up... I am playing during the Dance of the Dragons and there's a wild dragon named Cannibal roosted in Dragonstone slaughtering everything... He already killed another wild dragon and wounded another... I saw that you're supposed to have the option to "face the dragon" under your decisions. I sent some troops to Dragonstone with a valyrian in command and had no success to sse that option... I am doing something wrong or missing anything? (Edited with screenshots)

I am doing something wrong or missing anything? Your character needs to be in the same location as the dragon, not just one of his armies. So make sure he or she is leading the army in Dragonstone.

I forgot to mention that the valyrian I sent was in fact the one I'm currently playing with (Rhaenyra Targaryen).
Could it be something else that makes it not show up? Does the main character need specific traits or something?

I forgot to mention that the valyrian I sent was in fact the one I'm currently playing with (Rhaenyra Targaryen). Could it be something else that makes it not show up? Does the main character need specific traits or something? If your character has encountered a wild dragon in the past 60 days, or has ran from a dragon in the past 500 days, the decision won't appear. You also cannot already be a dragon rider and the dragon cannot already have a rider. The dragon cannot be a child (have dragon education) when you try to face it or be shy (which the Cannibal isn't). Nothing else really comes to mind, there are further conditions which can cause the decision to not be valid but then at least it will appear in the list and tell you why.

Off the top of my head, some dragons also have hidden modifiers making them not want to be tamed, which makes them not appear under face the dragon. No clue if this has been applied to Cannibal.
Something like shy_dragon, and hiding_dragon flags? What do you see if you type "charid 1" into the console, and then mouse over his portrait?

Assuming that you are doing nothing wrong, there are a couple of things to know... First, in the lore, Cannibal was untameable. The devs may have put some sneaky code on him to reflect this. Second, an alternative method for "facing the dragon" is to right click on the dragon's portrait like you would when conducting diplomacy with a lord. There is sometimes an option with dragons to "face them" in that menu.
