Though rare for someone not of the Seven Faith to be a Knight there are a few examples of this:

I think to keep it rare but make it possible how about adding if they have the sympathy for the faith of the seven trait they can be knighted?

It just happens automatically via event soon after they turn 17. They also have the opportunity to say no.
