As I've written in the title, it's possible to play as a red priestess? I know that theocracies aren't playable, I mostly mean with a regular feudal character.

Well there is the quick-and-dirt way of using the console to add the trait Red Priest, so you can make a custom character of Rhllor religion and just add the trait, but besides that i don't know if is a option in game for this.
Also you can go with the Alester Sarwyck style of character, making a Favoured by Rhllor and roleplay as a former Red Priest who came back to inherit their family land or something like that.

Give a red priest a county and then load up a safe as them? You can't give countys to someone who can't marry and produce children, hit the same wall when trying to play as giant with this method.

Unfortunately it's not possible to give land to priests.
