This mod rebuilds the trade routes in the mod so that they follow the main roads.
Essos is slightly revised, but Westeros has been done from the ground up.
Every major canonical road has its own trade route with trade that actually flows, so for example a war near King's Landing will mean that trade up the King's Road to the North will be badly affected. The screenshots below are from the A Clash of Kings bookmark, showing trade on the King's Road is partially blocked by the war near Storm's End.
Different routes have different values, so the King's Road and Gold Road are worth far more than for example the small trade route from Winterfell to the Wall. Trade in Westeros flows mainly north and east, except for in Dorne where it flows to the west first. In Essos trade flows mainly south and west. As a result, the Free Cities are some of the richest places on Planetos, since most trade from both continents ends up there. By contrast the Summer Sea routes are a bit more random. Old version below. This is a modification to the game's trade routes that adds trade routes back to Westeros routes and also has changes to the vanilla layout of routes in Essos. In Westeros trade routes exist along the roads with minor island links. Trade posts have been added to the richer provinces along the way or those that realistically should be trade ports. In Essos, trade routes exist along Valyrian roads where they exist and otherwise follow other drawn roads on the map. Essos is mainly unchanged from Vanilla except for the routes for Valyria, and a general prettifying of the routes to remove loops and sudden jumps. The Valyrian routes are intended for my Colonize Valyria mod. Should work fine with all of them, I haven't done anything for the new provinces in Valyria though so it will not have any trade routes of its own -- and logically it won't make much sense to have trade routes along the roads in Westeros centuries before they exist.

Haven't tested that but probably not, since trade routes are stored in the save and a vanilla AGOT game won't have the entries for the ones I enabled in Essos or Westeros.

For the Dorne route?
Open \common\trade_routes\westeros_roads.txt in Notepad and near the top of the file you will see this:

Start a new game, and you will have a traderoute connecting Dorne to the Westeros roads via the coastal desert/mountain range.

Updated for 1.6.1 taking the vanilla changes into account. I need to do some more fixing for Westeros, will do as soon as I have time.

-Prettified the routes: there should be no more loops anywhere. -Fixed a buggy route for Ib isles -Fixed a few bugs for Leng -Changed a few 'flow' errors that prevent provinces from actually getting a trade route modifier -New route in Essos: Mereen to Astapor (following the road) -New route in Essos: Demon Pass through Tolos and Elos that connects back to the Mhysa Faer - Ghis route. -New (restored) route in Westeros: sea path for Lannisport to Oldtown and the Arbor (through Greyshield of the Shield Isles).
Plus threw in a fix to prevent ruins from building trade posts.(not working)
Not save game compatible.

Question, have you considered making Barrowton, Weeping Town, and Starfall have trade routes run through them? I could be wrong, but I'm pretty sure those areas are canonically wealthier semi-large towns that could definitely benefit from lower end trade posts. Definitely not as beneficial as, say, White Harbor but definitely something to give them the edge.

Not really. Trade routes only should be tied to major roads: the Valyrian roads, the Kingsroad etc., and the trails of the east, as well as major sea routes. We know those locations you mention are richer than usual, but they're not part of any of those major routes.
It's also a matter of balance, too many routes will both unbalance the economy too much and make diseases far more powerful. There are several roads in Essos that should be trade routes for example, but that I will not enable. For example the Old Waste Road and Steel Road. That's also why I didn't link the Summer Sea to Port Yhos or Asabadh despite those being rich ports.
