Does this mod eliminate the horrible default beards and hair? I have noticed that stuff still shows up in a lot of the other portrait mods.

Looks gorgeous, but can I suggest a lore-based portrait diversity?
Valyrians: they're supposed to be beautiful, so I think they should use the most beautiful portraits available (Norman portraits). They're also a different ethnicity compared to the Westerosi, so no other Westerosi should use the same portraits.
Andals: these are all the Westerosi south of the Neck, descended from the Andal invaders (which allegedly brought blondism to Westeros). They are also parallel to the Germanic invaders, bringing the culture of chivalry and feudalism to Westeros. For all these reasons I think they should use the Germanic portraits.
First Men: the original inhabitans of Westeros, the First Men are now only found in the North and beyond the Wall. They have light skin but are normally dark haired/eyed. I think the French portraits are a nice solution, since they have more variants of darker hair compared to other Western European portraits. Another possibility is using the Norse portraits or the Finno-Ugric portraits. Of course you'd need to create two variants of the Firs Men portraits, a feudalized one (the North) and a tribal one (Wildlings).
Dornish: the Dornish are divided in three subraces, the Stone Dornish (akin to the other Andals), the Salt Dornish (with the most Rhoynar influence) and the Sand Dornish (burned by the desert climate). The first could just use the Andal portraits, but if you want to make them more distinct you could use the West Slavic or Russian portraits. The Salt Dornish are darker and more Mediterranean looking, almost Middle Eastern, so I think the new Arabian portraits would be great for them. This would also work for the Rhoynar that are still in Essos. The Sand Dornish are the darkest because they live in the desert, but not as dark as the Summer Islanders; for them I would suggest either the Ethiopian portraits or the Arabian Portraits with extra dark skin.
Free cities: the Free cities should use Italian portraits, with maybe Volantis being an exception. Volantis was heavily colonized by the Valyrians so they should use an alternative version of Valyrian portraits, with other eye/hair colors and slightly darker skin.
Ghiscari: the Ghiscari are supposed to be North African/Middle Eastern looking. They could use the Persian or North Indian portraits.
Summer Islanders: African portraits.

As a bit of a lore buff I was wondering what your source was for saying the Andals brought blondism to Westeros, First Men definitely tend to have darker hair, but there are First Men culture heroes who are supposed to have had blonde hair - Rowan Gold-Tree a daughter of Garth Greenhand and Lann the Clever (who some legends claim was a son of Rowan), if there is a claim that blonde hair was not present in Westeros until the Andals it could have some interesting implications - ie the Rowans were Andals who retconned themselves as descendants of Garth Greenhand, and the Lannisters only got their blonde hair through Joffrey Lydden but then claimed it had been a family trait since Lann

This is historically how we know the romans tended to look mediterranean: whenever they would write about the Gauls or the Germans, they always cited their distinctive fair look. Also, all the stories you cited are legends. No one really knows how these characters looked like, and Martin purposely has many noble houses claim descent from Garth Greenhand, who allegedly, also according to the legends, lived for hundreds of years and fathered hundreds of children. It's implied that we don't even know he, his legendary daughters, or even other characters like Brandon the Builder even existed.
