Anyone that holds Harrenhall after the curse. You are pretty powerful, with the potential to usurp the riverlands with careful scheming, but the constant deaths and negative events will keep you on the edge of your seat through the entire experience.

Toyne (obviously), Justman, Greyiron, Mudd, Qoherys, Varezys, Reyne, Whent, Tall. Most are extinct in AFFC but I like to mod a custom char in one of those houses. Also house Frost.I take Duncan and grant him a lordship and modify his house nane to Frost and keep the CoA. Also you can RP house Tuttle as house Frost. I'm always sad when House Toyne goes extinct when Myles Toyne dies during the bookmarks of the Greyjoy Rebellion and earliers.

Personally my favourite minor house is and always will be house Sarwyck as Alester before Ned dies start date.The house and character are from the GoT rpg videogame which I think had a good story and potential but bad gameplay and graphics.But it fits so well with this mod.You are a minor lord with many traits,situated in the center of Westeros where armies would most likely collide,you have a bastard cruel half-brother who schemes to kill you,a sister you can marry off for an alliance,things happening around you with the war of Five Kings imminent,a very rich Lord Paramount title waiting for you if you play your cards right and most importantly you are of a different religion then everyone in your surrounding(R'hllor) which makes diplomacy more challenging but also gives you access to R'hllor intrigue decisions and a natural ally in Stannis.First you get the High Lordship of Golden Road then become an adviser and commander for Tywin,you use that position to scheme and marry high vote on some laws fight off Robb then switch sides to Stannis help him win the Iron Throne marry your children to his daughter he gives you the Westerlands and you become Hand of the King.Now you and Stannis purge the realm of traitors and non-believers while fighting off the white walkers.After that you kill your bastard half-brother who has been plotting his entire life to kill you after using him as a commander the entire time.You make amends for your past deeds and again befriend your old friend the now Lord Commander of the NW Mors "the Butcher" Westrford(who is also a interesting character to play as).After all that you get bored and considering you still have the depressed trati you decide to kill yourself and start the chaos again with a war between your heirs.It doesnt get more GoT then that.
On second place I would also place another videogame house and that is Telltale games House Forrester AFFC scenario.You start as as a survivor of the Red Wedding.Ramsey killed your brother one sister is in Kings Landing the other brother in Essos and you have secret half brothers and half sister beyond the wall.You also have a house sword with good stats, an interesting position close to Winterfell,Ironwood which grants a bonus to income,a good marriage with potential allies, a blood feud with house Whitehill and also you have awesome house words Iron from Ice.Still you are in a dangerous position considering you are almost dead from the Red Wedding and you have a small army.Your best bet is again Stannis but considering I ally with Stannis as Sarwyck I like to ally with Jon make him king,get the HL of Wolfswood become advisor and die fighting either Whitehiils,Boltons or White Walkers.Then I continue playing as the brother returned from Essos marry into house Whitehill end the blood feud unite the land and eventually become King in the North.
Its even more fun to play these houses if you played the games they stem from(which had input from the author making them semi canon).Especially house Forrester considering Telltale closed and there will most likely never be a season 2.
Other than those, as others have mentioned, house Velaryon and Blackfyre are good choices.Wensington and Bolling(cadet houses of house Baratheon and Durrandon).Non-canon house Valkyn(they start with a valyrian sword).Also Baelish and Bronn AFFC scenario.

I've always had a soft spot for house Corbray. I like their ancestral home location and their origins from the andal invasion. Also Lyn and Lady Forlorn also their banner is sweet

I'm broadly happy to, so long as it is not egregious or implausible that someone claiming descent would be in the GC, if you could do lists of potential additions you'd like to see that would really help

I'm thinking a Darklyn, Tarbeck or Toyne. Or descendants of major Blackfyre Supporters, like House Ball, a descendant of Bittersteel, Reyne. No houses from hundreds of years ago, though that would be cool
